a "clean" italian meal for the fatkid




Goals for the week:
Early morning cardio (at least) three times this week.

No drinking on the weekend.

I got one new recipe under my belt tonight :)
Since the Fatkid is Italian and I know he always wants something with pasta, sauce and cheese...I tried to compromise. He specifically told me he wanted eggplant parm, but we all know how I feel about getting my protein so.. I tricked him!

I made our very own clean eating version of Chicken/Eggplant "Parm". This makes four servings so lunch tomorrow is made.

Ingredients:
1 LARGE boneless/skinless chicken breast (I mean like a lb)
1 LARGE eggplant
4 egg whites
his: italian bread crumbs
mine: almond meal
his: provolone cheese - 2 slices
mine: laughing cow light - 2 wedges

sauce:
1 15oz can tomato sauce
2 tbsp olive oil
1 medium onion finely diced
1 medium roma tomato finely diced
2 cloves garlic minced
1.5 tbsp basil
pepper to taste


Directions:
1. Mixed all sauce ingredients in a sauce pan and bring to a boil, then lower to a simmer and let cook while prepping the chicken.
2. Whisk together egg whites.
3. Flatten chicken with a meat tenderizer (or a screwdriver - I had to improvise) and cut into 4 pieces.

4. Slice 4 1/4in slices lengthwise off the eggplant, cut those four in half. You will have 8 pieces total.
5. Heat a large non-stick skillet and spray with olive oil spray 
6. his: dredge eggplant and chicken in eggs white and dip into bread crumbs, brown in skillet on both sides.
mine: dredge eggplant and chicken in egg whites and brown without any crumbs
7. Pour 1/3 the tomato sauce into a baking pan 
8. his: layer one piece of eggplant, 1/2 slice of provolone, eggplant, chicken, 1/2 slice provolone
mine: eggplant, 1/2 laughing cow light, sprinkle 1 tsp almond meal, eggplant, chicken, 1/2 laughing cow. 
9. Pour remainder of sauce over top.
10. Bake at 350 for 15-20 minutes.





Soooo good! The fatkid started eating his before I could even take a pic. Then asks me how fattening it was and at the last bite asks "Is there chicken in this?" - ha! I love it that he was too busy loving the sauce and eggplant to remember he is sick of chicken (insert biiiig grin). So excited I made a healthy version of one of his absolute favorite Italian meals. As for mine, the almond meal gave enough of a crunch that I didn't need breading and the laughing cow was so creamy I definitely felt like I was eating something I shouldn't. 

Unfortunately because ours were made differently I didn't figure the nutritional info out on this one, as long as you pay attention to your portions and ingredients this won't be "bad" for you.

  1. That recipe sounds sooo yummy! I'm going to have to give it a try once we have eggplant from our garden. Its good to find recipes that can be (mostly)healthy and yummy for the men too :) (even if you have to change it a bit for yourself!)
